The Caribbean sauce shelf does two jobs: it brings the heat, and it brings the colour. Our range covers both — fiery scotch bonnet pepper sauces for the table, and the browning and marinades that give brown stew chicken and oxtail their deep mahogany finish.

Pepper sauces are the heart of it. Encona, Grace, Windmill and Spur Tree all make versions built on scotch bonnet, and each has its own balance of heat, vinegar and sweetness. Windmill comes in a 142ml bottle for the table or a 480ml for households that get through it. Spur Tree's crushed red pepper sauce is chunkier and works as much as a condiment as a cooking ingredient.

Browning is the one people forget until they need it. A tablespoon gives brown stew chicken, oxtail and gravy the colour that makes them look right. We stock Grace, Sarsons, Spur Tree and our own Home From Home browning.

For the grill and the marinade, Grace Jerk BBQ sauce comes in a 375g bottle or a 2.5kg catering tub, and Spur Tree's BBQ and brown stew sauces take most of the work out of a weeknight dinner. Pickapeppa — the sweet, spiced Jamaican classic — is a table sauce in its own right and a good glaze for pork.

Sweet heat: scotch bonnet jelly and Frank & Co's pineapple scotch bonnet jelly sit somewhere between a condiment and a preserve. Excellent with cheese, cold cuts, or brushed over chicken wings in the last few minutes.
